So things on the health side of things are coming along really well. Both Mick and I are loving the new found energy we have, we feel great and are looking good too (if I do say so myself!). I have lost about 6/7 kilos in the past 50 or so days which is AWESOME. And before you say “ohhh you must be starving” – I so am not. We have been eating really nutritious, hearty and yummy foods. Like crispy skin salmon, pork patties, beef stew, pulled pork and many more. It’s been really fun cooking up heaps and I am happy to say that I think this will be a long term health change. Bring it on!
Speaking of foods…here’s another recipe for y’all to have a go at. Its really really easy and really really yummy!
All you need are some ripe bananas (the riper, the better), ground almonds/almond meal and eggs. Thats it.
This recipe makes ~ 12 small pancakes/pikelets
5 small bananas (thai small! so ~ 2 medium bananas)
1/2 cup ground almonds
1/2 cup blueberries
Butter for cooking
First you mash the banana up, don’t go too crazy – you want some chunks in there. Then add the eggs and mix well to combine. Stir through the ground almonds to make a nice batter. If it seems too wet, add more.
Heat your fry pan over medium and add some butter. Put ~1Tbsp per pancake (or you could make them larger) and plop in some of the blueberries to cook. Flip when you think they might be done – they won’t get the same bubbles rising as other pancakes do so keep a close watch so they don’t burn!
Serve them up on their own, with some cream or a squeeze of lemon. They are dairy free, gluten free, low sugar and superb! They would even make a great snack to eat cold if you have any left of course! ha!
